| Abstract: | Soybean [Glycine max (L.) Merrill] owes worldwide reputation by its high-quality protein and low cholesterol edible oil. It has an average protein content of 40 per cent and is a protein-rich source than any of the common vegetable or animal food sources. Soybean seeds also contain about 20% oil on a dry matter basis of which 85 per cent is unsaturated and cholesterol-free. Because of potentiality and a wide range of agricultural, industrial and medicinal values, soybean is rightly described as â natureâ s unique giftâ to mankind and also known as a â miracle cropâ . The area under soybean cultivation expanded significantly as a result of its nutritive, economic importance and diverse domestic usage. It is also a prime source of vegetable oil in the international market. |
